We spent the weekend in Baltimore
Our host showed me the Jewish date on a bottle of milk. If it is a Cholov Yisroel only plant.and there is at the least a Yotzeh V'Nichnas every milking What happens Shabbos? Why is it necessary?

Our standard for Cholov Yisroel is such that the entire plant is exclusively Cholov Yisroel. We have two shifts of mashgichim, one who lives at the farm and works nights and Shabbosim, the other drives in every morning from Baltimore (about 1:20 minutes). Mashgiach is present by every single chaliva (365 days a year) and also constantly monitors the bottling plant which is across the street. Although once everything is Cholov Yisroel, one may not need so much oversight, we don’t take any chances. Therefore, we constantly monitor, track and record everything at the farm and plant to ensure the highest level of hashgocho.

I hope that you understand that my questions were pure curiosity
I am wondering what the date code safeguards and how.
"What happens Shabbos?" was not referring to ישרא' רואה but
the setting of the code by the Mashgiach.

The date code is inputted by the mashgiach only. It needs a special code which only he has. it is an extra safeguard that allows us to be on top of all the milk production. there is no bottling done for us on Shabbos and no date code. the farm bottles under their own label on Shabbos.
